Day 5- Jiangsu Jiangnan Biotechnology Company

Jiangsu Jiangnan Biotechnology Company is a high production mushroom factory. This was an amazing tour! I visited the Hamakua Mushroom Factory on the Big Island which specializes in a variety of high valued mushrooms. These mushrooms are mostly used for high end restaurants though some varieties are found in grocery stores. This was a gigantic production factory that produced straw mushrooms. It was 20x bigger than Hamakua production. Seven 20ft autoclave bins were used for sterilization, at least sixty 20ft tall bays housed growth chambers for over 52,000 jars of mushrooms. Practices were relatively the same. The only difference was the amount of products produced and this was only one kind of variety! One thing that was quite different were the tour practices. We were able to go inside the growth chambers and packing areas where as Hamakua we weren't allowed access. Its obvious that there are different sanitation regulations in the US. I felt very privileged to have access to these facilities and interact with the personal and learn their practices. To see production on a massive scale was quite impressive.
